After the grape harvest, the producers prepare the high stairs and the sticks to start “grazing”, that is to gather the olives by beating the branches of the olive plants and make the ripened olives on specific nets, to be carried in a second time to the olive mill, in wicker baskets. After having eliminated the leaves, there manufactured in the crusher first and, then, they are chopped and ground in stoned millstones, like “the old fashioned making oil”. Through the mechanic cold pressing of olives, we have the genuine extra virgin oil of Tuscany, whose quality has been recognized by the European Union as IGP- “Protected Geographical Status”. Everything exclusively takes place in Tuscany, for an authentic and genuine Italian product: from the olive groove to the olive mill, from the olive gathering till the bottle up of the fine vegetal relish.
