The Tuber magnatum Pico, known as finest white truffle, is an hypogeum mushroom, gathered during fall, from October to December. The research takes place in the areas that are wet for the summer rains and, above all, under poplars trees, oaks, linden trees and willows. The truffles gathered by the Gamignani family that has dealt with the research of the finest fruits of the earth from many generations, grow along with the trees of the hills of San Miniato, in the hearth of Tuscany, like the olives that give birth to the extra virgin oil. The mixture of the fruity taste of the olive and the delicate and unmistakable flavour of the white truffle of San Miniato, the rarest and appreciated of the world, creates a relish with an intense and refined scent. Few drops are sufficient to flavour salads, pasta and cold dishes and to enhance the taste of meat and fish.
